Abstract:
The fact that medicinal and
aromatic plants have strong antioxidant and antimicrobial effects increases the
importance of their use in the pharmaceutical and food industries. There are
many researches on the use of natural antioxidant and antimicrobial sources of plants
and fruits. As a result of studies, it is known that antioxidant and
antimicrobial capacities of some plants and fruits are higher than synthetic
substances. In this study, antioxidant-antimicrobial activities and phenolic
content of extracts obtained from different parts of various plants (olive
leaf, tipton weed, tea seed) and fruits (pomegranate, mandarin, orange kiwi
peel) in different methods and concentrations were investigated. DPPH
(2.2.-diphenyl-1-picrihydrazyl) radical scavenging capacity was used to
determine antioxidant activity, disc diffusion method was used to determine
antimicrobial activity and folin-ciocalteu reagent method was used to determine
the phenolic content. When the antioxidant activities of the materials
used in the study were examined, it was determined that the highest pomegranate
peel and the lowest were the tangerine peel, and when the phenolic content was
examined, the highest activity was in the olive leaf and the lowest was in the
orange peel extract. When looking at the antimicrobial activities, it was determined that the
maximum zone diameter was against pomegranate bark extract against Escherichia
coli, Salmonella enterica, Listeria monocytogenes and Staphylococcus
aureus bacteria. It was observed that the extracts obtained from tangerine
peels did not show any effect against bacteria. As a result of
the study, it is aimed to provide basic data for the use of materials for
medical purposes, since the plants and fruits used constitute an important potential
resource in our country..
